Recently, we had the pleasure of welcoming Chef Federico and his wife from Eichhalde, an Italian restaurant in Freiburg, Germany.
Originally from Italy, Chef Federico trained in his homeland before moving to Freiburg, where he opened Eichhalde. Since 2023, the restaurant has consistently retained its Michelin star and was also recognized among the world's outstanding Italian restaurants last year, establishing him as one of the leading Italian chefs working abroad today.
To our surprise and delight, he and his wife brought us handmade gifts, including cookies and pickled vegetables they had prepared themselves. We were deeply touched by such kindness and generosity.

Before founding this business, I worked as a Japanese cuisine chef. My wife is also a chef; after serving as Deputy Head Chef at a Michelin one-star sushi restaurant "Sushi-Murayama", she spent two and a half years leading its second branch, called Kosetsubessyo,as Head Chef.
Although we spent only about two hours together, our conversation extended far beyond knives and cooking. We spoke about craftsmanship, dedication to our work, the importance of family, and the values that guide our lives.
What impressed me most was realizing that, despite coming from different countries, cultures, and languages, we share the same principles: sincerity in our work, the discipline of daily effort, and above all, a deep passion for what we love to create.
Even when words cannot fully express everything, hearts can still understand one another.
It was a truly unforgettable experience.
I was especially moved by Chef Federico's belief that both work and family deserve equal care and attention. It reminded me that success is not measured solely by scale, but by remaining true to what we believe in and striving to bring joy to those who choose to visit us.
With heartfelt gratitude for this wonderful connection, we sincerely hope our paths will cross again someday.
